Would that be too big for the Evoque?

I'm not an expert on tyre sizes... so.. any help would be much appreciated.

You would need to reduce the aspect ratio to maintain the rollong circumference ie 45 down to 30. This would make for a very hard ride and you wouldnt be able to drive over anything bigger than a gnats bo!!ock in fear of damaging the rim or sidewall

Again Chiggy, that size would add about 9mm to the aspect ratio of the sidewall, and not only would it throw your speedo right out, but would also probably cause rubbing issues on the front strut.
275/40 would maintain the side profile aspect ratio, but may still be to wide and rub the strut side, besides, if it's an 8'' rim. then 275 is certainly not recommended, for safety,steering,and handling reasons.
8'' rims should have no wider then 255 max.
