Never having ventured into the land of Apple, will a Nano work in the same way as a Touch linked to the Evoque?

I have heard and read in some forum posts that the ipod interface is pretty slow and laggy when going through song lists...
can someone confirm if this is true?

It's no slower than the rest of the system. Any iPod or iPhone should appear and work the same way with the Meridian system. It can be a pain scrolling through to find the album or song you want, but you can customise how many pages are scrolled through at a time which can speed things up a lot.
