There is a document about this on topix guys. I just checked today SSM72940 - Ambient air temperature sensor intermittent/inoperative or erratic readings

Yep - My 2016 Evoque does this as well, but not in the winter - usually we notice it on cool summer evenings or mornings and we have to turn the heating on and up to keep warm. It goes off after about 10 minutes and usually only does it once each journey. Had many software upgrade but no fix. Incidentally my sisters 2016 Disco sport does exactly the same thing - I understand they have the same system. They can't fix hers either. LR seem to say they have never heard of this fault it fells like they think that were making it all up.
